Bron it took me a while to find something ellable friendly. I give you credit for coming up with dinners and snacks for her, that is one hard task. So here is what I came up with, it is pumpkin soup (or as Little Man claims 'Orange Soup').
Ingredients:
- 2tbsp Olive Oil
- 1 1/2 onions -chopped
- 1 large leek (white part only -chopped)
- 2 cloves garlic (crushed)
- 1tsp ground coriander
- 2tsp ground cumin
- 1tsp nutmeg
- 1tsp curry powder
- 2kg pumpkin (diced)
- 2 large potato (diced)
- 2 Lt chicken or vegetable stock
- 1 cup of cream (optional)
Method:
Heat oil in large pan. Add onion & leek and cook for about 2 min, then add garlic and spices and cook for about 1 min.
Add pumpkin and potato to large pan and pour stock over. Bring to the boil and then simmer for about 30 min (or until potato is soft). Allow to cool slightly and then blend until you have a smooth consistency.
Stir through cream and reheat gently. Season with salt and pepper and serve.
Make a large pot - enough for a meal to go in the freezer.

ReplyDeletemmmm pumpkin soup ... i thought about changing out the cream for coconut milk - but then remembered she shouldn't be having too much coconut ... but it's probably healthier without the creaminess anyway right? ... the ellable thing is second nature now ... meal plans are a must - it's the quick and easy dinners that become hard ... and unfortunately contrary to popular opinion it's quite easy to be very unhealthy on an ellable diet ... thanks so much for looking this one up K - I sincerely appreciate the effort ... b x
